Also known as Matsutake. These mushrooms grow in the second half of the fall season in very wet and cold conditions just before winter. Pines have the strongest taste, a few pieces can easily flavour a broth. They are a unique experience compared to other popular wild mushrooms. Pine mushrooms were my first reference point for umami flavour and they are the best example of this abstract tasting note. As a huge bonus, this species of mushroom will often leave consumers feeling energized and virile.
